Blackened Shrimp & Guacamole Appetizer

It is official, summer has arrived and I have been on Pinterest saving easy and no-fuss recipes for summer entertaining and these blackened shrimp with homemade guacamole and cucumber are definitely on the list! Light but full of incredible flavors.

These healthy adorable bites of goodness only take a few minutes to put together!!  You simply blacken the seasoned shrimp by searing them in a cast iron pan over high heat...  They will cook in no time.  You will serve the shrimp on top of crunchy and cool cucumber slice which will be covered with the yummy guacamole.  

And let me tell you, this combination of flavors and textures is perfection. Whether you are hosting a cocktail party, entertaining guests, or just enjoying a quick meal, they are sure to become a favorite!!

















Blackened Shrimp & Guacamole Cucumber Appetizer

Prep Time: 15 minutes Cook Time: 10 minutes Total Time: 25 minutes Servings8

Ingredients

FOR THE SHRIMP AND CUCUMBER Appetizer:

  • 1 tablespoon oil
  • 1 tablespoon creole seasoning
  • 1 tablespoon paprika
  • 1 pound shrimp, peeled and deviened
  • 1 cucumber, sliced

  • FOR THE guacamole:

  • 1 avocado, mashed
  • 1 red onion, finely chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 clove garlic, minced
  • Juice of one fresh lime
  • salt and pepper to taste

Directions

    FOR THE SHRIMP AND guacamole CUCUMBER appetizer:

  1. Toss cleaned and dry shrimp in the oil and the seasoning and cook in a preheated (medium-high heat) heavy bottomed pan/skillet until slightly blackened, about 5 minutes per side.
  2. Assemble with cucumber slices, topped with guacamole and top with cooked shrimp.  
  3. Garnish with fresh cilantro for color and enjoy.

  4. FOR THE fresh guacamole:
Peel and mash avocado in a medium serving bowl. Stir in onion, garlic, cilantro, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.
