Easy Summer Fruit Tart

Hello everyone...  Another week gone by and it is now August.  What??  Are you all wondering where summer has gone???  I just can't believe it.  August already and my husband and I have not even planned a vacation yet.  We have talked about possible weekend getaways but nothing is final yet.  We have just been too busy.  Mostly due to family celebrations and commitments.  Life gets a little crazy sometimes doesn't it?

I do want to schedule a little weekend getaway to Newport, Rhode Island before summer is over.   I do love it there.  It is gorgeous.  Beautiful beaches, stunning mansions and great food.  What more can I ask for? Hopefully it is not too late to book something for the end of this month.  I am so ready to dip my feet in the sand and take in the ocean breeze.  Wish me luck.  I just hope it is not too overpriced.

And speaking of great food, today I am sharing my favorite fruit tart recipe.  It is easy to prepare, delicious and absolutely gorgeous.  Any fruit combination will work here friends.

Because it is summer and I do not want to spend too much time in the kitchen so my go to product for a quick dessert is the Pillsbury 's refrigerated pie crust.  I always keep a box in my refrigerator.  It is very easy to prepare.  Just follow the instructions on the box for baking.

For the filling, I used cream cheese, powder sugar and vanilla top with fresh strawberry jam.  (See recipe below for actual ingredients and instructions)

Ice cold lemonade.  So perfect on this hot summer day.


    What You Need:

  • 1 Pillsbury refrigerated pie crust (softened as directed on box)
  • 1 pkg. (8 oz.) Philadelphia cream cheese, softened
  • 1/2 cup strawberries
  • teaspoon of vanilla
  • 1/2 cup of powdered sugar
  • 1 large can of Mandarin Oranges
  • Mixed fruit such as blueberries, grapes, raspberries and blackberries (or your favorite fruits
  • 1 cup of fresh strawberry jam (recipe below)
  • 8" tart pan


  • 1.   Heat oven to 450°F. Remove pie crusts from pouches; place flat on work surface. Dust with a little flour.      Spray non-stick spray on tart pan.2.  Fit pie crust on tart pan.  Pinch crust equally around side of tart pan.  Prick generously with fork.3.  Bake 9 to 13 minutes or until light golden brown. Cool completely, about 30 minutes. .4.  Meanwhile, in large bowl, mix cream cheese, powdered sugar and vanilla.5.  Spoon cream cheese filling into the tart shell and refrigerate until thoroughly chilled, about 30 minutes.

  • 6.  Remove from refrigerator and spread thin coat of strawberry jam on top of the cooled filling.  Top with          favorite fruits and sprinkle with a bit of powdered sugar to make it pretty. 
  • Have fun with the design and enjoy.  Trust me, your friends and family will love it. 

  • Strawberry Jam

    Prep Time: 20 Minutes
    Cook Time: 20 Minutes

    1/2 pound fresh strawberries, hulled
    1 cup white sugar
    1/4 cup lemon juice
    1.In a wide bowl, crush strawberries until you have 1/2 a cup of mashed berry. In a heavy bottomed saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C).

I must say that a cream cheese filling is my favorite, especially with lots of vanilla, then all the summer fruit I can put makes it final....Janet, it is a pleasure to meet you! I love Rhode Island too, having lived in Massachusetts for 11 years for school, my husband and I would take the train often to New York or drive the coast to Rhode Island. I hope you and your husband will be able to get away before the summer is over. I can't even bear to think about summer being over yet. In ten days, I actually go back to teacher meetings, planning and preparing for an early school start this year on August 25.

  13. Janet, fruit tarts are one of my favorite desserts. Especially in the summer time! I use the same ingredients for my filling, but have never thought to top it with strawberry jam.
