Easy Blueberry Pancakes

Hello friends.  I hope your week has been a wonderful one.  And what a perfect week it's been.  The weather has been delightful.  I guess summer is not ready to leave us and I am certainly not going to complain.  Fortunately, the warm temperatures are supposed to remain through the weekend.  Needless to say, I am looking forward some fun outdoor activities this weekend. 

So to start the weekend on a happy note, I thought I share my husband's easy, no fuss recipe for blueberry pancakes.  A perfect weekend treat.

A late breakfast is my favorite way to start off the weekend.  After a wonderfully long Saturday lie-in, without the distraction of an alarm clock and the pressures of work, there is truly nothing better than a delicious mid morning feast.  

I hope that you will enjoy this simple and delicious recipe.  It will surely please anyone who likes to begin the day with great food.

2  cups of original Bisquick mix

1  cup milk

2  eggs

1  teaspoon vanilla extract

1/2 teaspoon cinnamon

1 Cup fresh blueberries
  1. Heat griddle or skillet over medium-high heat or electric griddle to 375°F; grease with cooking spray, vegetable oil or shortening. (Surface is ready when a few drops of water sprinkled on it dance and disappear.)
  2. Stir Bisquick, milk and eggs, vanilla and cinnamon until blended; gently stir in blueberries. Pour by slightly less than 1/4 cupfuls onto hot griddle. 
  3. Cook until edges are dry. Turn; cook until golden.
Makes 13 pancakes                     
For uniform pancakes, pour the batter from an ice-cream scoop or a 1/4-cup measure.
You can use other types of fruits instead of blueberries. Strawberries, apples, bananas or a combination would be yummy!

It was tradition for many years for the whole family twenty plus members all staying in a resort in MN by the lake and husband's uncle Larry would make blueberry pancakes for us all. This brought memories. Your roses are arranged beautifully. The pancakes looks fluffy and lovely!
