Delicious Banana Bread
After blissfully cold weather and winter storm winds last night, we woke up to a beautiful and peaceful morning. Getting much less snow than anticipated, it was just the perfect setting to enjoy a warm cup of coffee and a slice or two of an old time favorite, banana bread. I took advantage of this stunning winters day to snuggle on my favorite chair and enjoy some much needed me time.
Coffee time is just not complete without a supple and good flavored bread. Don't you agree?? So I am sharing this delicious recipe by Readable Eatables which I used to bake this yummy bread last night. It makes a super moist and fluffy banana bread. Coffee a real experience with this one!

Ingredients
1/2 cup butter, softened
1 1/2 cups sugar
2 eggs
1 cup mashed bananas (about 3 bananas)
4 tablespoons buttermilk
1/2 teaspoon vanilla
1 3/4 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon baking soda
Grease and flour 1 large loaf pan
In a large bowl, cream butter and sugar together. Add eggs, bananas, buttermilk and vanilla until the batter is well mixed. Add in the flour, baking powder, salt and soda. Mix until well combined. Divide batter into greased and floured bread pans and bake at 350 degrees for 50-55 minutes or until a toothpick comes out clean

Glad you missed some of Nemo's wrath, we got slammed. But as long as the power is on, I will not complain. We won't get out of here for days!
