Blackberry & Cheese Toast

I have been working on developing a few recipes lately and I am excited to share one that I have finalized and tested this weekend.  It is a recipe for a delicious and light blackberry toast made with Crème fraîche, creme cheese, vanilla and honey.  

In many ways, I find toast to be the perfect finger food for entertaining.  It is literally a blank canvas for the cook.  Just think of it!  There are no real limits to the number of combinations that we can create. Versatile and ready in just a matter of minutes.  They can be served as a meal, snack or an appetizer for unexpected company.  Besides, this could quite possibly be the prettiest toast ever.






I am not a fan of blackberries at all but since they were plentiful in the house, I figured I better come up with a creative way to use them before they went to waist.  I  had a French baguette in the house, cream cheese, and some Crème fraîche so I started to play around with these ingredients and came up with this recipe. I added a touch of good quality vanilla and honey and set that aside.  I then proceeded to make a quick jam by cooking a few blackberries and blueberries in a saucepan with water, sugar and vanilla until the mixture resembled a jam. 

I then toasted a few bread slices, added the prepared cheese spread and topped it with the jam.  I finished the toast by adding fresh blackberries and a few mint leaves for freshness.  It is touch of sweet with a an explosion of flavors!!!  I knew I was on to something from the first bite.  These are truly delicious.!!!






The jam will keep nicely in the refrigerator for about two weeks.  The best part about this recipe, it's that it is good enough for a quick snack, breakfast in a hurry or a BEAUTIFUL appetizer!!!

BLACKBERRY &  CHEESE TOASTS

INGREDIENTS:

  • 1 1/2 cups blackberries 
  • 1/2 cup blueberries
  • 2 tsp vanilla
  • 1 1/2 tbsp sugar
  • 1 1/2 tbsp fresh honey
  • 3 tbsp water
  • 8 oz French bread, sliced (or your bread of choice!)
  • 4 oz cream cheese
  • 4 oz Crème fraîche 
  • fresh mint to garnish

DIRECTIONS:


  1. In a medium-sized saucepan combine 1 cup of blackberries, 1/2 cup blueberries, 1 tsp vanilla, 1 tbsp sugar, and water (covered) over a medium low flame. Once simmering and the fruit begins to burst (about 5 minutes) gently mash with a fork or potato masher. Cover once more and simmer over a low flame until needed.
  2. Meanwhile, mix cream cheese, Crème fraîche, 1 tsp vanilla, and 1 1/2 tbsp honey in a bowl. (set aside)
  3. Toast the bread as desired — I recommend crispy.
  4. When ready, smear each slice of bread with a thick layer of cheese spread, then spoon over with the berry jam. Garnish with fresh blackberries and mint, then eat!
*add 1 tsp if you want the blackberries more runny, 2 tsps for a thicker texture!

There is a little place in our community that sells the biggest blackberries I have even seen!   4. Like you, I'm really not much of a blackberry fan (the little microscopic seeds drive me batty!), but my husband thinks they're the greatest thing since sliced bread...which makes your pairing here with toast nothing less than PERFECT!!!

  6. Oh wow this looks amazing! I can't eat cheese, or gluten, but perhaps I could use a dairy free alternative and gf toast. I am a blackberry lover! In my days before food allergies, I would have scarfed these down, even though they are far too elegant to eat in such a manner!
