Salmon and Herb Cream Cheese Finger Sandwich

Hello.  I hope everyone has been enjoying the warm weather....  I am so glad that the rain is finally gone and that sunny skies have prevailed.

We all know that when our gardens reach their peak in pretty blooms, it is time to take entertaining outdoors. Time to enjoy natures natural color palette and to step-up our scene. Today, I am happy to share my recipe for Salmon and Herb cream cheese finger sandwich that is both elegant and packed with lots of flavors.

This finger sandwich is delightfully sophisticated and perfect for Brunch, bridal shower or afternoon tea party.  This delicate finger sandwich not only tantalizes the eye, but it will also take your guests into a culinary journey.  The herb cream cheese mixture and honey add a wealth of mouthwatering earthy flavors.

RECIPE



INGREDIENTS

  • 1 Pkg. light cream cheese
  • 2 tablespoons dill leaves, finely chopped
  • 2 tablespoons finely chopped chives
  • Salt and pepper
  • Slices whole wheat bread
  • Sliced smoked salmon
  • 1 tablespoon honey
  • 1 seedless cucumber
  • Radishes
  • Small pieces of arugula or spinach for garnish
  • flowers for garnish









METHOD

  • Step 1
     Place cream cheese, dill, chives, and honey in a bowl. Season with salt  and pepper. Stir until well combined.
Step 2
 Cut cucumber lengthwise into 1/8-inch-thick ribbons using a mandoline or  other manual slicer. Now cut radishes in very thin slices and set-aside.
  • Step 3 Cut bread into triangles.  Lightly spread 1 side of each piece of bread with cream cheese mixture. Wrap cucumber around bread making sure that ends are on top and add a bit more of the cream mixture so it acts like a glue. Top with salmon and garnish with radish slices, arugula and flowers.  Using a sharp knife, remove crusts.
